A secondary objective is to assess the level of awareness among the Syrian population regarding sumac’s various uses beyond its culinary applications. Sumac fruits were mechanically ground and subjected to immersion, ultrasound, and microwave-assisted extraction methods, followed by filtration and evaporation to yield a viscous gelatinous extract.
